Bartender Certification Mixology Fundamentals 2 — Questions and Answers

Question 1: What is the 'sour' component in a classic sour cocktail formula?

Simple syrup
Fresh citrus juice (lemon or lime) (Correct answer)
Angostura bitters
Soda water

Correct answer: Fresh citrus juice (lemon or lime)

In classic sour cocktails, the sour component is fresh citrus juice — typically lemon or lime — which provides tartness and balances the sweetness.

The classic cocktail sour formula consists of three components: a base spirit, a sweet component (simple syrup, liqueur, or sugar), and a sour component (fresh citrus juice). Fresh lemon juice is used in most sours (Whiskey Sour, Amaretto Sour, Tom Collins), while lime juice defines daiquiris and margaritas. The balance between sweet and sour is critical — the standard ratio is 2 parts spirit, 0.75–1 part sweet, and 0.75–1 part sour, adjusted to taste.

Question 2: What does 'muddling' accomplish in cocktail making?

Cools the drink rapidly
Extracts oils, juices, and flavors from fresh ingredients like herbs and fruit (Correct answer)
Strains ice from the drink
Creates carbonation

Correct answer: Extracts oils, juices, and flavors from fresh ingredients like herbs and fruit

Muddling uses a muddler to gently crush fresh ingredients, releasing their essential oils and juices to infuse the drink with flavor.

Muddling is the technique of using a muddler (a thick bar tool, usually wooden or stainless steel) to gently press and crush fresh ingredients at the bottom of a glass or shaker. The goal is to extract the essential oils, juices, and flavors from herbs (like mint in a Mojito), citrus (like lime wedges in a Caipirinha), or fruit (like berries in a Smash). Over-muddling can release bitter compounds, especially from citrus pith or mint stems, so a light touch is recommended.

Question 3: What is the function of simple syrup in cocktails?

To add carbonation
To provide a uniform, easily dissolvable sweetness (Correct answer)
To add bitterness and complexity
To preserve freshness of citrus juice

Correct answer: To provide a uniform, easily dissolvable sweetness

Simple syrup is a liquid sweetener made from equal parts sugar and water, dissolving easily in cold drinks without the grittiness of undissolved sugar.

Simple syrup (1:1 ratio of sugar to water by volume or weight) is a fundamental cocktail ingredient because granulated sugar does not dissolve well in cold liquids. Simple syrup integrates seamlessly into cocktails, providing consistent and easily adjustable sweetness. Rich simple syrup (2:1 sugar to water) is thicker and sweeter. Flavored syrups (lavender, cinnamon, ginger, honey) expand the bartender's toolkit. Simple syrup should be stored refrigerated and typically lasts 2–4 weeks.

Question 4: Which of the following is an example of a 'built' cocktail (assembled directly in the serving glass)?

Margarita
Daiquiri
Old Fashioned (Correct answer)
Cosmopolitan

Correct answer: Old Fashioned

An Old Fashioned is a 'built' cocktail, assembled by adding sugar, bitters, whiskey, and ice directly into the rocks glass.

A 'built' cocktail is one that is assembled directly in the serving glass rather than being shaken or stirred in a separate vessel and then strained. The Old Fashioned is the quintessential built cocktail — a sugar cube (or syrup) and bitters are placed in a rocks glass, followed by whiskey and ice, and gently stirred in place. Other common built cocktails include the Negroni (when built in an ice-filled glass), the Rum and Coke, and the Gin and Tonic.

Question 5: What is the purpose of a 'float' in a cocktail?

To add carbonation to the bottom of the drink
To layer a small amount of a spirit or liqueur on top of the drink for aroma and visual effect (Correct answer)
To keep the ice from melting
To prevent the glass from tipping over

Correct answer: To layer a small amount of a spirit or liqueur on top of the drink for aroma and visual effect

A float is a small amount of spirit or liqueur carefully poured over the back of a spoon to sit on top of a drink, adding visual appeal and a burst of flavor on the first sip.

A 'float' technique involves slowly pouring a small amount of a spirit or liqueur over the back of a bar spoon held just above the drink's surface, allowing the liquid to spread gently and sit on top without mixing. This creates a layered visual effect and allows the guest to experience the floated ingredient's aroma and flavor on the first sip. A classic example is the dark rum float on a Mai Tai or a Chartreuse float on certain cocktails. The technique works because the floated liquid is less dense than the drink below.

Question 6: What is 'dry shaking' and when is it used?

Shaking a drink with no ice to emulsify protein-based ingredients before adding ice (Correct answer)
Shaking a drink using dry ice for carbonation
A technique for making cocktails with no liquid ingredients
Shaking a drink over a flame

Correct answer: Shaking a drink with no ice to emulsify protein-based ingredients before adding ice

Dry shaking means shaking cocktail ingredients without ice to emulsify proteins (like egg white or aquafaba) before the wet shake with ice, creating a better foam.

Dry shaking is a two-stage technique used when a cocktail recipe includes egg white or aquafaba (used as a vegan alternative) to create a frothy foam. First, the ingredients are shaken vigorously without ice to emulsify the proteins and begin foam formation. Then ice is added and the mixture is shaken again (wet shake) to chill and dilute the drink. The result is a thick, stable foam on top of the finished cocktail. Examples include the Whiskey Sour (with egg white), Clover Club, and Pisco Sour.
