Bartender Certification Basic 2 — Questions and Answers
Question 1: What is the standard jigger measurement for a 'single' shot in the United States?
- 1 oz
- 1.5 oz (Correct answer)
- 2 oz
- 0.75 oz
Correct answer: 1.5 oz
A standard single shot in the US is 1.5 oz (44 ml). This is the most common pour size used in bars for base spirits in cocktails.
In the United States, the standard single shot is 1.5 oz (approximately 44 ml). This is the amount typically used as the base spirit in most cocktail recipes. Some establishments use a 1 oz single and a 2 oz double, but 1.5 oz is the nationwide standard. Accurate pouring is important both for consistency and for cost control at the bar.
Question 2: Which glass is traditionally used to serve a Martini?
- Rocks glass
- Highball glass
- Cocktail/Martini glass (Correct answer)
- Collins glass
Correct answer: Cocktail/Martini glass
A Martini is traditionally served in a cocktail glass (also called a Martini glass), which has a long stem and wide conical bowl to keep the drink chilled.
The cocktail glass, commonly known as a Martini glass, features a long stem and a conical bowl that widens toward the rim. The stem prevents body heat from warming the drink, while the wide bowl allows the aroma to be appreciated. It typically holds 3–6 oz. Most classic 'up' cocktails like the Martini and Manhattan are served in this style of glass.
Question 3: What does 'neat' mean when a customer orders a drink?
- Served over crushed ice
- Served with a mixer
- Served at room temperature with no ice (Correct answer)
- Served chilled with no dilution
Correct answer: Served at room temperature with no ice
'Neat' means the spirit is poured directly into the glass at room temperature with no ice, no mixer, and no chilling.
When a customer orders a drink 'neat,' they want the spirit served at room temperature, poured directly from the bottle into the glass with no ice, water, or other additions. This is common for whiskey, brandy, or other premium spirits that patrons want to enjoy without dilution. It differs from 'straight up' (chilled and strained, no ice) and 'on the rocks' (served over ice).
Question 4: What is the proper way to hold a wine glass to avoid warming the wine?
- By the bowl
- By the rim
- By the stem (Correct answer)
- By the base
Correct answer: By the stem
A wine glass should be held by the stem to prevent body heat from transferring to the wine and warming it prematurely.
Holding a wine glass by the stem prevents the warmth of your hand from transferring to the wine in the bowl. This is especially important for white wines, rosés, and sparkling wines that are served chilled. Even red wines served at cellar temperature can be warmed to an unpleasant level if held by the bowl. Proper stem-holding also gives better control and is considered correct etiquette.
Question 5: What is a 'bar back' responsible for at a bar?
- Taking orders from customers
- Managing the cash register
- Supporting the bartender with restocking and cleaning (Correct answer)
- Carding guests at the entrance
Correct answer: Supporting the bartender with restocking and cleaning
A bar back assists the bartender by restocking supplies, cleaning glasses, emptying trash, and keeping the bar organized and operational.
A bar back (also called a barback or bar runner) is a support position in bar operations. Their duties include restocking beer, liquor, and mixers; clearing and washing glasses; emptying trash bins; cutting garnishes; changing kegs; and keeping the bar area clean and organized. A good bar back allows the bartender to focus on making drinks and serving customers. It is often considered an entry-level role for those looking to become bartenders.
Question 6: Which ingredient gives a Margarita its characteristic tart flavor?
- Orange juice
- Lime juice (Correct answer)
- Lemon juice
- Grapefruit juice
Correct answer: Lime juice
Lime juice is the citrus component of a classic Margarita, providing the characteristic tart and bright flavor that balances the sweetness of triple sec and the strength of tequila.
A classic Margarita is made with tequila, triple sec (or another orange liqueur), and fresh lime juice, often served with a salted rim. The lime juice provides the tart, acidic character that defines the drink and balances the sweetness of the triple sec. Fresh lime juice is strongly preferred over bottled for quality cocktails. The standard ratio is 2:1:1 — tequila, triple sec, lime juice.
